    Prepare the Vegetables

    Clean the mushrooms with a damp cloth and slice them. Rinse the spinach under cold water and chop it roughly. Slice the black olives. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Then, add the sliced mushrooms and cook for about 5 minutes until they are golden brown.

    Add Spinach and Olives

    Stir in the chopped spinach and black olives into the skillet. Cook for another 3-4 minutes until the spinach is wilted. Remove the skillet from heat and set aside.

Assembly

    Assemble the Dish

    In a baking dish, spread a layer of the sautéed vegetable mixture. Spoon dollops of ricotta cheese over the vegetables, followed by a layer of shredded mozzarella cheese.

    Bake

    Preheat your oven to 180°C (350°F). Bake the dish in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
