Bread Stix Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, salt, and Italian seasoning.

Combine Mixtures
Add the activated yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Stix
Preheat the oven to 425°F (220°C). Punch down the risen dough and roll it into a rectangle about 1/2 inch thick. Cut into strips.

Place the strips on a baking sheet lined with parchment paper, cover, and let rise for another 20 minutes.

In a food processor, combine basil leaves, pine nuts, garlic cloves, Parmesan cheese, and salt. Pulse until finely chopped.

Add Olive Oil
With the food processor running, slowly drizzle in olive oil until the pesto reaches the desired consistency. Set aside.
