Prepare the Crust

Make the Graham Cracker Crust
In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until the crumbs are well-coated and the mixture resembles wet sand.

Press into Pan
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Make sure to pack it tightly. Set aside.
Prepare the Filling

Mix Cream Cheese
In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer.

Add Sugar and Vanilla
Gradually add powdered sugar and vanilla extract to the cream cheese, mixing until well combined and smooth.

Whip Heavy Cream
In a separate bowl, whip the heavy cream until stiff peaks form.

Fold in Heavy Cream
Gently fold the whipped cream into the cream cheese mixture until fully incorporated, being careful not to deflate the whipped cream.
Assemble and Chill

Layer the Filling
Pour the cream cheese filling over the prepared crust in the springform pan. Smooth the top with a spatula.

Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until set.
Prepare the Topping

Once set, remove the cheesecake from the refrigerator and top with fresh berries and mint leaves.
