Cooking the Base

Prepare the Quinoa
Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed. Remove from heat and let it sit covered for 5 minutes.

Chop the Vegetables
While the quinoa is cooking, rinse and prepare the toppings. Dice the cherry tomatoes, and avocado, finely chop the red onion, and rinse the cilantro. Combine the black beans and corn kernels in a bowl.

Mix the Dressing
In a small bowl, whisk together the lime juice, olive oil, honey, cumin, salt, and black pepper until well combined.
Assembling the Dish

Combine and Serve
In a large serving bowl, fluff the cooked quinoa with a fork. Add the black beans, cherry tomatoes, avocado, corn, red onion, and cilantro. Drizzle the dressing over the top and toss gently to combine. Serve immediately and enjoy!
