Potato Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into small cubes and place them in a pot of salted water. Bring to a boil and cook for about 10-12 minutes until fork-tender. Drain and let cool slightly.

    Mash the Potatoes

    Once the potatoes are cool enough to handle, mash them in a large bowl until smooth. Season with salt and black pepper to taste. Set aside.

Breading

    Prepare the Breading Mix

    In a separate bowl, mix together the all-purpose flour, cornstarch, garlic powder, onion powder, and paprika until well combined.

    Prepare the Egg Mixture

    In another bowl, whisk together the egg and milk until fully blended.

    Coat the Tots

    Take a small portion of the mashed potatoes and shape them into small tot shapes. Dip each tot first in the egg mixture, then roll in the flour mixture until fully coated. Repeat for all potato mixture.

Frying

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Tots

    Carefully add the coated potato tots to the hot oil in batches, making sure not to overcrowd the pan. Fry for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serving

    Serve Hot

    Serve the crispy D.P. Tots hot with ketchup on the side. Other sauces are available upon request.
