Preparation
- 1
Marinate the Chicken
In a bowl, combine the chicken breasts with the spicy marinade. Ensure that the chicken is evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.
- 2
Chop the Vegetables
While the chicken is marinating, chop the red bell pepper, jalapeño pepper, and onion into bite-sized pieces. Set aside.
Cooking
- 3
Heat the Pan
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the marinated chicken breasts.
- 4
Cook the Chicken
Cook the chicken breasts for about 6-7 minutes on each side, or until they are cooked through and have a nice golden-brown color. Use a meat thermometer to check that the internal temperature reaches 75°C (165°F).
- 5
Add the Vegetables
Once the chicken is cooked, remove it from the skillet and let it rest. In the same skillet, add the chopped red bell pepper, jalapeño, and onion. Sauté for about 5 minutes until they are tender.
- 6
Combine and Season
Slice the cooked chicken into strips and return it to the skillet with the sautéed vegetables. Season with salt and black pepper to taste. Stir everything together until well combined.
Serving
- 7
Plate the Dish
Transfer the chicken and vegetable mixture onto a serving plate. Garnish with fresh cilantro and lime wedges for an extra kick.
