Chicken Marinade

    Prepare the Marinade

    In a bowl, combine olive oil, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Whisk until well-mixed.

    Marinate the Chicken

    Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

BBQ Sauce

    Prepare the BBQ Sauce

    In a saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well and bring to a gentle simmer.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until thickened. Remove from heat and set aside.

Grilling Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

    Grill the Chicken

    Remove the chicken from the marinade and place on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

    Baste with BBQ Sauce

    During the last 5 minutes of grilling, brush the chicken generously with the prepared BBQ sauce, turning occasionally to caramelize the sauce.

    Rest and Serve

    Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving. Serve with extra BBQ sauce on the side.
