Directions for Preparation

    Prepare the Roast

    Preheat the oven to 425°F (220°C). Rub the top sirloin roast with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Place the roast on a rack in a roasting pan.

    Roast the Beef

    Roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15 minutes before slicing.

    Make the Bordelaise Sauce

    In a saucepan, combine red wine and minced shallots. Bring to a boil and reduce to a simmer until the volume is reduced by half. Add the beef stock and continue to simmer until reduced to about 1 cup.

    Finish the Sauce

    Remove from heat, whisk in the butter, and season with salt and pepper to taste.

    Slice and Serve

    Slice the roast against the grain and serve with the Bordelaise sauce drizzled over the top.
