Preparation

Preheat your oven to 450°F (230°C).

Season the Roast

In a small bowl, mix together the kosher salt, black pepper, minced garlic, and chopped rosemary. Rub the olive oil all over the prime rib roast, then generously apply the seasoning mixture, ensuring it covers all sides.

Roasting

Place the prime rib roast in a roasting pan, bone-side down. Roast in the preheated oven for 20 minutes to develop a crust.

Lower the Temperature

After 20 minutes, reduce the oven temperature to 325°F (160°C) and continue roasting until the internal temperature reaches desired doneness (125°F for rare, 135°F for medium rare, 145°F for medium, 155°F for medium well, and 160°F for well done), about 1.5 to 2 hours.

Resting

Remove the roast from the oven and tent it with aluminum foil. Let it rest for 20-30 minutes before carving to allow the juices to redistribute.

Making the Au Jus

While the roast is resting, place the roasting pan on the stovetop over medium heat. Add the beef broth and scrape up any browned bits from the bottom of the pan. Simmer for a few minutes to reduce slightly.

Serving

Carve the roast into slices and serve with the au jus on the side.
