Prepare the Lobster Stuffing
In a skillet, melt the butter over medium heat. Add the shallot and garlic, sauté until softened, about 2-3 minutes. Stir in the chopped lobster meat, parsley, bread crumbs, lemon juice, salt, and pepper. Cook for an additional 2-3 minutes until heated through. Remove from heat and let cool slightly.

Prepare the Sablefish
Preheat the oven to 375°F (190°C). Rinse the sablefish fillets and pat dry with paper towels. Using a sharp knife, create a pocket in each fillet by slicing it horizontally without cutting all the way through.

Stuff the Fillets
Carefully stuff each sablefish fillet with the lobster mixture. Use toothpicks to secure the opening if necessary.

Bake the Stuffed Sablefish
Place the stuffed sablefish fillets on a greased baking dish. Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
