    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Tortillas

    In a skillet, heat olive oil over medium heat. Quickly warm each tortilla in the skillet for about 10-15 seconds on each side until soft and pliable. Set aside.

    Mix the Filling

    In a bowl, combine shredded chicken, chopped onion, salt, and pepper. Mix well.

    Assemble the Enchiladas

    Spread a thin layer of the red or green chile sauce on the bottom of a baking dish. Take a tortilla, spoon some of the chicken mixture into the center, roll it up, and place it seam side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all enchiladas are in the dish, pour the remaining chile sauce over the top. Sprinkle shredded cheese evenly over the sauce.

    Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
