Cooking Instructions
Prepare the Herb Crust
In a bowl, mix together the chopped parsley, dill, lemon zest, minced garlic, olive oil, salt, and black pepper until well combined.
Prepare the Fish
Preheat the oven to 400°F (200°C). Place the white fish fillets on a baking sheet lined with parchment paper. Spread the herb mixture evenly over each fillet.
Bake the Fish
Bake the herb-crusted fish in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.
Make the Orange Glaze
While the fish is baking, combine the orange juice and honey in a small saucepan. Bring to a simmer over medium heat and cook until the mixture reduces and thickens slightly, about 10 minutes.
Cook the Jasmine Rice
In a separate saucepan, bring the vegetable broth (or water) to a boil. Add the jasmine rice, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender.
Serve the Dish
Serve the herb-crusted fish topped with the orange glaze, alongside jasmine rice and sautéed seasonal vegetables.
