Bistro Cut Sirloin

Preparation

    Prepare the Steak

    Season the bistro cut sirloin steaks with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

    Make the Bordelaise Sauce

    In the same skillet, add the chopped shallots and cook until softened, about 2-3 minutes. Pour in the red wine and bring to a boil. Reduce heat and simmer until reduced by half.

    Finish the Sauce

    Add the beef stock and thyme to the skillet and continue to simmer until slightly thickened. Remove from heat and stir in butter until melted and smooth.

    Serve

    Slice the rested steaks and serve with the Bordelaise sauce drizzled over the top.
