    Prepare the Potatoes and Brussels Sprouts

    Preheat the oven to 400°F (200°C). Wash and cut the fingerling potatoes in half lengthwise and trim the Brussels sprouts. Toss them both with olive oil, salt, and pepper. Place on a baking sheet and roast for 25-30 minutes until tender and golden.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood bacon until crispy. Remove from the skillet, crumble, and set aside. Leave about 1 tablespoon of bacon fat in the skillet.

    Caramelize the Onion

    In the same skillet, add the sliced onion and cook on low heat until caramelized, about 15-20 minutes, stirring occasionally.

    Prepare the Salmon

    Season the salmon fillets with salt and pepper. In the same skillet, add a bit more olive oil if needed and cook the salmon, skin-side down first, for about 4-5 minutes on each side or until cooked through.

    Make the Herb Cream

    In a small saucepan, heat the heavy cream over medium heat until warm. Stir in the chopped fresh herbs and season with salt and pepper to taste. Remove from heat.

    Assemble the Dish

    On each plate, place the roasted potatoes and Brussels sprouts. Top with a salmon fillet, a spoonful of caramelized onions, and drizzle the herb cream over the top. Finish with crumbled bacon and a dollop of maple bacon jam.
