    Prepare the Chimichurri Sauce

    In a food processor, combine parsley, oregano, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Pulse until finely chopped. Adjust seasoning to taste and set aside.

    Cook the Fingerling Potatoes

    Boil the fingerling potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly. Cut in half lengthwise and toss with olive oil, salt, pepper, and grated parmesan. Sauté in a skillet over medium heat until golden brown, about 5-7 minutes.

    Sauté the Spinach

    In another pan, heat 1 tablespoon of olive oil over medium heat. Add fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper to taste.

    Grill the Hanger Steak

    Preheat the grill to high heat. Season the hanger steak with olive oil, salt, and pepper. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for a few minutes before slicing.

    Plate the Dish

    On a plate, arrange a bed of sautéed spinach, add the grilled hanger steak on top, and serve with the parmesan fingerling potatoes on the side. Drizzle with chimichurri sauce before serving.
