Preparation and Cooking

    Prepare the Chicken

    If using a pre-cooked rotisserie chicken, simply carve a quarter of the chicken. If cooking from raw, season the chicken with olive oil, salt, and pepper, then roast in the oven at 375°F (190°C) for about 1 hour or until fully cooked.

    Cook the Ribs

    Preheat your grill or smoker to medium heat. Season the ribs with salt and black pepper. Cook on the grill or in the smoker for about 2-3 hours, basting with BBQ sauce during the last 30 minutes until tender and caramelized.

    Prepare the Coleslaw

    In a large bowl, mix together shredded cabbage, carrots, and your favorite coleslaw dressing. Toss to combine and refrigerate until ready to serve.

    Cook the French Fries

    You can use frozen French fries or make your own. If using frozen, bake according to package instructions. If making from scratch, cut potatoes into fries, season with olive oil, salt, and pepper, and bake at 425°F (220°C) for about 25-30 minutes, flipping halfway.

    Serve

    On a large plate, arrange the quarter rotisserie chicken, half rack of smokehouse ribs, a generous serving of coleslaw, and a side of crispy French fries. Drizzle additional BBQ sauce over the ribs if desired.
