    Prepare the Pork Tenderloin

    Preheat the oven to 400°F (200°C). Rub the pork tenderloin with olive oil, salt, and pepper. Place it in a roasting pan.

    Roast the Vegetables

    Toss the Brussels sprouts and fingerling potatoes in olive oil, salt, and pepper. Scatter them around the pork in the roasting pan. Roast for about 25-30 minutes until the pork reaches an internal temperature of 145°F (63°C) and the vegetables are tender.

    Prepare the Gravy

    In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped shallots and cook until soft, about 3-4 minutes. Stir in the fresh sage and cook for another minute.

    Make the Pan Gravy

    Add the chicken broth to the skillet and bring to a simmer. Cook for about 5-7 minutes until slightly thickened. Season with salt and pepper to taste.

    Slice the pork tenderloin and serve it with roasted Brussels sprouts, fingerling potatoes, a dollop of apple bacon jam, and drizzle the sage pan gravy over the top.
