Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove it from the skillet and drain on paper towels. Leave about 2 tablespoons of bacon grease in the skillet.

Make the Jam
Add the cooked bacon, brown sugar, apple cider vinegar, cinnamon, and black pepper to the skillet. Stir well to combine. Cook over medium-low heat for about 30 minutes, stirring occasionally, until the mixture thickens and becomes jam-like.

Cool and Store
Remove the jam from heat and let it cool. Once cooled, store in an airtight container in the refrigerator for up to 2 weeks.

Serve the apple bacon jam alongside slices of smoked gouda cheese and romaine chiffonade for a delightful appetizer.
