Prepare the Pasta

In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1 minute. Stir in the flour and cook for 2 minutes to create a roux. Gradually whisk in the milk and heavy cream, cooking until the sauce thickens. Add the cheddar and gruyere cheese, stirring until melted and smooth. Season with salt, black pepper, and paprika.

Combine Pasta and Lobster

In a large mixing bowl, combine the cooked macaroni and lobster meat. Pour the cheese sauce over the pasta and stir until well combined.

Bake the Dish

Transfer the mixture to a greased baking dish. Sprinkle breadcrumbs on top and drizzle with a little melted butter if desired. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until the top is golden and bubbly.

Remove from the oven, let cool slightly, and garnish with chopped parsley before serving.
