Prepare the Ingredients
Rinse the halibut fillets and pat them dry. Season both sides with salt and black pepper.
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced mushrooms and cook until they start to soften, about 3-4 minutes.
Add Tomatoes and Spinach
Stir in the cherry tomatoes and cook for another 2 minutes. Add the fresh spinach and cook until wilted, about 2 more minutes.
Cook the Halibut
Push the vegetables to the sides of the skillet and add the halibut fillets in the center. Pour the white wine over the fish and cover the skillet with a lid. Cook for about 5-7 minutes, or until the halibut is opaque and flakes easily with a fork.
Finish and Serve
Drizzle with lemon juice before serving. Serve the halibut on a plate with the sautéed vegetables on the side.
