Chicken Preparation

    In a large bowl, combine buttermilk, salt, black pepper, garlic powder, and onion powder. Whisk until well blended. Add chicken breasts, ensuring they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 2 hours or overnight for best results.

    In a shallow dish, combine all-purpose flour, paprika, salt, and black pepper. Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece of chicken in the flour mixture, pressing lightly to adhere. Shake off excess flour and set aside.

    In a large, heavy-bottomed skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully add chicken pieces to the hot oil, being careful not to overcrowd the pan. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Remove from oil and drain on paper towels.

    In a saucepan over medium heat, melt butter. Once melted, whisk in flour and cook for about 1-2 minutes until lightly golden.

    Gradually whisk in chicken broth and heavy cream. Bring to a simmer, stirring continuously until the gravy thickens, about 5-7 minutes. Stir in thyme, salt, and black pepper to taste.
