Wine Making Process
1. Harvesting Grapes
Begin by harvesting ripe Cabernet Sauvignon grapes from the vineyards in Napa Valley, Leap District. Ensure that the grapes are handpicked to maintain quality.
2. Crushing and Destemming
Once harvested, destem the grapes and crush them to release the juice. This can be done using a crusher-destemmer machine.
3. Fermentation
Transfer the crushed grapes into fermentation tanks. Add the yeast to the grape juice and stir gently. Allow the mixture to ferment at a controlled temperature of around 25°C (77°F) for 7-10 days.
4. Pressing
After fermentation, press the mixture to separate the liquid wine from the solid grape skins. Use a wine press for this step.
5. Addition of Sugar and Sulfites
Measure and add the sugar and sulfites to the pressed wine. Stir well to ensure even distribution.
6. Aging with Oak Chips
Add oak chips to the wine for flavoring. Transfer the wine into barrels or storage tanks and let it age for at least 6-12 months.
