For the Scallops
Prepare the Scallops
Rinse the scallops under cold water and pat them dry with paper towels. This helps them sear better.
For the Sweet Potato Corn Hash
Cook the Bacon
In a large skillet over medium heat, cook the applewood smoked bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
Sauté the Vegetables
In the same skillet, add the diced sweet potatoes and cook for about 5-7 minutes until they begin to soften. Add the diced onion, red bell pepper, and minced garlic, cooking for another 5 minutes until the vegetables are tender.
For the Spicy Honey Chipotle Aioli
Combine Ingredients
In a mixing bowl, combine the mayonnaise, honey, minced chipotle in adobo, lime juice, minced garlic, and salt. Mix well until smooth.
Taste and Adjust
Taste the aioli and adjust the seasoning with additional salt or chipotle if desired. Set aside.
