Method
Preparing the Lemon Herb Butter
Make the Herb Butter
In a small bowl, combine the softened unsalted butter, lemon juice, chopped parsley, and chopped dill. Mix thoroughly until well combined. Set aside.
Grilling the Salmon
Prepare the Salmon
Preheat your grill to medium-high heat. Brush both sides of the Atlantic salmon fillets with 2 tablespoons of olive oil. Season with salt and black pepper.
Preparing the Saute Mix
Saute the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add Corn and Tomatoes
Add the sweet corn and halved baby tomatoes to the skillet. Cook for another 3-4 minutes until the corn is tender and the tomatoes are warmed through.
Combine and Finish
Add the chopped fresh basil to the skillet. Toss everything together gently to ensure the gnocchi is coated with the vegetable mixture.
Serving
Plate the Dish
On a serving plate, place a generous portion of the sauté mix with gnocchi. Top with a grilled salmon fillet and a dollop of the lemon herb butter.
Garnish and Enjoy
Garnish with additional fresh basil if desired and serve immediately.
