Salmon

Method

Preparing the Lemon Herb Butter

1

Make the Herb Butter

In a small bowl, combine the softened unsalted butter, lemon juice, chopped parsley, and chopped dill. Mix thoroughly until well combined. Set aside.

Grilling the Salmon

2

Prepare the Salmon

Preheat your grill to medium-high heat. Brush both sides of the Atlantic salmon fillets with 2 tablespoons of olive oil. Season with salt and black pepper.

3

Grill the Salmon

Place the salmon fillets on the grill skin-side down. Grill for about 5-6 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Remove from the grill and let it rest.

Preparing the Saute Mix

4

Saute the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

5

Add Corn and Tomatoes

Add the sweet corn and halved baby tomatoes to the skillet. Cook for another 3-4 minutes until the corn is tender and the tomatoes are warmed through.

6

Cook the Gnocchi

While the vegetables are cooking, bring a pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions (usually around 2-3 minutes until they float). Drain and add to the skillet with vegetables.

7

Combine and Finish

Add the chopped fresh basil to the skillet. Toss everything together gently to ensure the gnocchi is coated with the vegetable mixture.

Serving

8

Plate the Dish

On a serving plate, place a generous portion of the sauté mix with gnocchi. Top with a grilled salmon fillet and a dollop of the lemon herb butter.

9

Garnish and Enjoy

Garnish with additional fresh basil if desired and serve immediately.
