Method

Directions

  1. 1

    Bake the Potatoes

Preheat the oven to 400°F (200°C). Wash the russet potatoes and pierce them several times with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until tender.

  2. 2

    Prepare the Filling

Once the potatoes are cool enough to handle, cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border around the edges.

  3. 3

    Mix Ingredients

Add butter, sour cream, half of the cheddar cheese, chopped green onions, salt, black pepper, and bacon bits to the potato insides. Mash until smooth and well combined.

  4. 4

    Refill the Potatoes

Spoon the mixture back into the potato skins, mounding it slightly on top. Sprinkle the remaining cheddar cheese over the filled potatoes.

  5. 5

    Second Bake

Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

  6. 6

    Serve

Garnish with additional green onions if desired and serve hot.
