    Prepare the Ingredients

    Thinly slice the corned beef and set aside. Drain the sauerkraut and press out excess moisture.

    Assemble the Sandwich

    Spread 1 tablespoon of Thousand Island dressing on one side of each slice of rye bread. On two slices, layer the corned beef, sauerkraut, and Swiss cheese. Top with the remaining slices of rye bread, dressing side down.

    Grill the Sandwich

    Heat a skillet over medium heat and melt 1 tablespoon of butter. Place the sandwiches in the skillet and grill until golden brown, about 3-4 minutes per side. Add the remaining butter to the skillet as needed.

    Serve

    Once the sandwiches are grilled to a crispy golden brown and the cheese is melted, remove from the heat. Cut in half and serve hot with additional Thousand Island dressing on the side.
