Prepare the Marinade

In a medium bowl, whisk together hoisin sauce, honey, minced garlic, and red curry paste until well combined.
2. Marinate the Lamb
Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Cook the Lamb Chops
3. Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).
4. Season the Chops
Remove the lamb chops from the marinade and discard the marinade. Pat the chops dry with paper towels. Season both sides with salt and black pepper.
