Fire Roasted Tomato Relish

Salmon Preparation

Prepare the Herb Mixture

In a small bowl, combine the chopped parsley, dill, minced garlic, lemon zest, salt, and black pepper.

Season the Salmon

Drizzle the salmon fillets with olive oil and rub the herb mixture evenly over the top of each fillet.

Sear the Salmon

Heat a large skillet over medium-high heat. Place the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until cooked through.

Fire Roasted Tomato Relish Preparation

Combine Ingredients

In a medium bowl, mix together the diced fire roasted tomatoes, red onion, chopped basil, balsamic vinegar, olive oil, salt, and black pepper.

Let it Rest

Allow the relish to sit for at least 15 minutes at room temperature to let the flavors meld.

Confetti Orzo Preparation

Cook the Orzo

In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions, usually about 8-10 minutes.

Add Vegetables

In the last 2 minutes of cooking, add the diced bell peppers and frozen peas to the orzo. Stir and cook until the vegetables are tender.

Finish the Orzo

Drain any excess liquid and stir in grated Parmesan cheese. Season with salt and black pepper to taste.
