Method

Preparing the Pork Rib Eye

Seasoning

Pat the bone-in pork rib eye dry with paper towels. Season generously with salt and black pepper on both sides.

Searing

In a large skillet, heat olive oil over medium-high heat. Sear the pork rib eye for 4-5 minutes on each side until it develops a golden brown crust. Remove from skillet and set aside.

Making Shrimp Infused Barbeque Sauce

Infusing Shrimp Shells

In a saucepan, add shrimp shells and 1 cup of water. Simmer for 15 minutes to extract flavors. Strain and discard shells.

Making the Sauce

In the same saucepan, combine the strained shrimp-infused water, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir and simmer on low heat for 10-15 minutes until thickened.

In a skillet, cook the apple wood bacon over medium heat until crispy. Remove and drain on paper towels.

Caramelizing Onions

In the same skillet, add olive oil. Slice the yellow onion and add to the skillet, seasoning with salt and black pepper. Cook on low heat for 20-25 minutes, stirring occasionally, until golden and caramelized.

Roasting Garlic

Preheat the oven to 400°F (200°C). Wrap garlic cloves in foil and roast for 30 minutes until soft.

Cooking Potatoes

Peel and chop potatoes, then boil them in salted water for 15-20 minutes until tender. Drain.

Mashing

In a mixing bowl, combine boiled potatoes, roasted garlic (squeezed out of their skins), butter, heavy cream, salt, and black pepper. Mash until creamy and well combined.

Bringing it All Together

Final Cooking

Preheat the oven to 375°F (190°C). Place the seared pork rib eye in a baking dish and brush generously with the shrimp infused barbeque sauce. Bake for 20-25 minutes until the internal temperature reaches 145°F (63°C).

Serving

Serve the pork rib eye topped with caramelized onions and crumbled bacon alongside the roasted garlic mashed potatoes.
