Baked Haddock

Method

Baked Haddock

1

Preheat the Oven

Preheat your oven to 375°F (190°C).

2

Prepare Haddock

In a baking dish, arrange the haddock fillets. Drizzle with olive oil and lemon juice.

3

Season the Haddock

Sprinkle garlic powder, paprika, salt, and black pepper evenly over the fillets.

4

Bake the Haddock

Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.

Lobster Mango Salsa

5

Combine Ingredients

In a medium bowl, combine the chopped lobster meat, diced mango, red bell pepper, red onion, and cilantro.

6

Season the Salsa

Add lime juice and salt to the bowl and mix gently until everything is well combined.

7

Chill

Let the salsa sit in the refrigerator for at least 15 minutes to allow the flavors to meld.

Confetti Orzo

8

Cook Orzo

In a medium saucepan, bring vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente.

9

Add Vegetables

During the last 2-3 minutes of cooking, add the diced carrot, zucchini, and frozen peas to the orzo.

10

Finish the Dish

Once cooked, drain any excess broth and stir in olive oil, salt, and black pepper. Mix until well combined.
