Directions
Cook the Pasta
Boil a large pot of salted water over high heat. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté Chicken
In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced chicken breast. Season with salt and black pepper. Sauté for about 5-7 minutes until the chicken is cooked through and golden brown. Remove from the skillet and set aside.
Sauté Shrimp
In the same skillet, add another tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the shrimp and cook for 3-4 minutes until they turn pink and opaque. Remove from the skillet and set aside.
Prepare Lobster Sauce
In the same skillet, add the lobster stock and bring to a simmer. Allow it to reduce slightly for about 5 minutes. Then, stir in the heavy cream and let it simmer for another 3 minutes until it thickens slightly. Season with additional salt and black pepper to taste.
Combine Ingredients
Add the cooked rotini pasta, sautéed chicken, and shrimp into the skillet with the lobster sauce. Toss everything together until well combined and heated through, about 2-3 minutes.
Serve
Once everything is well mixed, remove from heat. Sprinkle with grated Parmesan cheese and chopped fresh parsley before serving.
