Prepare the Honey Garlic Glaze

In a small saucepan, combine honey, soy sauce, minced garlic cloves, and a pinch of salt. Cook over medium heat until the sauce thickens slightly, about 5-7 minutes. Set aside.

Marinate the Chicken

In a bowl, combine buttermilk, salt, and black pepper. Add the chicken breasts and let them marinate for at least 30 minutes.

Batter the Chicken

In a shallow dish, mix together flour and cornstarch. In another bowl, beat the eggs. Remove the chicken from the buttermilk, allowing excess to drip off. Dredge in the flour mixture, dip in the egg, and then coat again in the flour mixture.

Fry the Chicken

In a large skillet, heat cooking oil over medium-high heat. Fry the chicken until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich

Toast the brioche buns until golden brown. Place a piece of fried chicken on each bun, drizzle with the honey garlic glaze, top with sweet and spicy pickles, and sprinkle with sesame seeds. Serve with crispy fries on the side.
