    Prepare the Apricots

    In a medium saucepan, combine the dried apricots and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the apricots are soft.

    Blend Ingredients

    Transfer the apricot mixture to a blender or food processor. Add sugar, lemon juice, and a pinch of salt. Blend until smooth and fully combined.

    Chill the Mixture

    Pour the blended mixture into a bowl and refrigerate for at least 2 hours or until completely chilled.

    Freeze the Sorbet

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Hardening

    Transfer the sorbet to an airtight container and freeze for at least 4 hours or until firm.
