    Smoke the Cabbage

    Preheat your smoker to 225°F (107°C). Cut the cabbage into quarters and brush with olive oil. Season with salt and black pepper. Place the cabbage on the smoker grates and smoke for about 1 hour or until tender.

    Prepare the Romaine

    While the cabbage is smoking, wash and chop the romaine lettuce into bite-sized pieces. Set aside.

    Make the Dressing

    In a bowl, whisk together the remaining olive oil, lemon juice, minced garlic, Worcestershire sauce, salt, and black pepper until combined.

    Assemble the Salad

    Once the cabbage is smoked and slightly cooled, chop it into bite-sized pieces. In a large bowl, combine the smoked cabbage, chopped romaine, and shredded Parmesan cheese. Drizzle the dressing over the salad and toss gently to combine.

    Crush the tortilla chips into small pieces and sprinkle them on top of the salad before serving for added crunch.
