    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water. Let it sit for about 5 minutes to bloom.

    Heat the Cream

    In a saucepan, combine the heavy cream, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves and the cream is hot, but not boiling.

    Combine Gelatin with Cream

    Remove the saucepan from the heat. Add the bloomed gelatin to the hot cream mixture, stirring until fully dissolved.

    Add Mango Puree and Cinnamon

    Stir in the mango puree and ground cinnamon until well combined.

    Pour into Molds

    Pour the mixture into individual serving molds or cups. Refrigerate for at least 4 hours, or until set.

    Prepare Almond Crystals

    While the panna cotta is setting, prepare the almond crystals by toasting sliced almonds in a dry skillet until golden and fragrant. Let them cool.
