Prepare the Ribs

Preheat the oven to 300°F (150°C). Rinse the ribs and pat them dry with paper towels. Rub the ribs with salt, black pepper, smoked paprika, garlic powder, and onion powder.

Make the Tamarind Glaze

In a small bowl, mix the tamarind paste and brown sugar until well combined. Set aside.

Bake the Ribs

Place the ribs on a baking sheet lined with aluminum foil. Brush the tamarind glaze generously over the ribs. Cover with another piece of foil and bake for 2.5 hours.

Finish the Ribs

After baking, remove the foil and increase the oven temperature to 400°F (200°C). Bake for an additional 20-30 minutes until the ribs are caramelized and slightly crispy on the edges.

Prepare the Garnish

While the ribs are finishing, combine the fresh herbs, sliced radishes, crushed tortilla chips, and grated Parmesan cheese in a bowl. Mix well.

Serve

Remove the ribs from the oven and let them rest for a few minutes. Slice the ribs and serve them topped with the herb-radish-tortilla mixture.
