Prepare the Dough

In a large bowl, combine masa harina, salt, and vegetable broth. Mix until a soft dough forms. Set aside.

Cook the Guanciale

In a skillet over medium heat, cook the guanciale until crispy. Remove and set aside, leaving the fat in the skillet.

Braised Turnip Greens

In the same skillet, add turnip greens and a splash of water. Cover and simmer until tender, about 10 minutes. Season with salt and black pepper.

Cider Pickled Turnips

In a small bowl, combine cider vinegar, sugar, and sliced turnips. Let sit for at least 30 minutes.

Assemble the Tamales

Take a small ball of dough and flatten it in your hand. Place a spoonful of crispy guanciale and braised turnip greens in the center. Fold the dough over the filling and shape into a tamale.

Steam the Tamales

Place the tamales upright in a steamer basket. Steam for 45 minutes to 1 hour or until the masa is firm and cooked through.

Serve

Serve tamales hot, drizzled with North Carolina BBQ sauce and topped with cider pickled turnips.
