Preparation
Preparing the Potatoes
Wash and peel the russet potatoes, then cut them into even-sized sticks, about 1/4 inch thick.
Drying the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.
Heating the Oil
In a deep pot or fryer, heat the vegetable oil to 325°F (165°C).
Frying the Potatoes
Carefully add half of the dry potato sticks to the hot oil and fry for about 5-6 minutes or until they are soft but not browned. Remove them and let them drain on paper towels.
Double Frying
Increase the oil temperature to 375°F (190°C) and return the first batch of fries to the hot oil. Fry for an additional 2-3 minutes until they are golden brown and crispy. Remove and drain again on paper towels. Repeat with the second batch.
Seasoning
While the fries are still hot, sprinkle with salt to taste.
