Prepare the Fries

Soak the cut potatoes in cold water for at least 30 minutes. Drain and pat dry.

Fry the Potatoes

Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt.

Cook the Steak

Season the hanger steak with salt and black pepper. Heat olive oil in a skillet over high heat. Sear the steak for about 4-5 minutes per side for medium-rare. Remove from heat and let rest for 5 minutes before slicing.

Make Creamed Spinach

In the same skillet, add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted. Stir in heavy cream and simmer until thickened. Season with salt and pepper to taste.

Prepare Blue Butter

In a bowl, mix softened butter with crumbled blue cheese until well combined.

Serve

Plate the sliced steak with creamed spinach and pickled mushrooms on the side. Top the steak with a dollop of blue butter and serve with house fries.
