Prepare the Bacon

In a large pot over medium heat, cook the bacon lardons until crispy. Remove and set aside, leaving the rendered fat in the pot.

Sauté Leeks

Add the sliced leeks to the pot and sauté in the bacon fat for about 5 minutes, until soft and translucent.

Add Potatoes and Broth

Add the diced potatoes to the pot, stirring to combine. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until the potatoes are tender.

Blend the Soup

Using an immersion blender, blend the soup until smooth. You can also transfer the soup in batches to a blender if you prefer.

Finish the Soup

Stir in the heavy cream, salt, and black pepper. Adjust seasoning to taste.

Serve

Ladle the soup into bowls, top with crispy bacon, pickled leeks, a drizzle of herb oil, and sprinkle with chopped chives.
