Marinate the Pork

In a large bowl, combine orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Add the pork shoulder, ensuring it is well-coated. Cover and refrigerate for at least 4 hours or overnight.

Prepare the Pork

Preheat the oven to 300°F (150°C). Remove the pork from the marinade, reserving the marinade. Place the pork in a large roasting pan and pour the reserved marinade over the top.

Braise the Pork

Cover the roasting pan with aluminum foil and braise in the oven for about 4-5 hours, or until the pork is fork-tender. Check occasionally, adding water if necessary to keep the bottom of the pan moist.

Make the Cabbage Slaw

In a large bowl, combine shredded cabbage, sliced Fresno chili, olive oil, and salt to taste. Toss well to combine.

Prepare Cilantro Lime Mayo

In a small bowl, mix mayonnaise with chopped cilantro and lime juice to taste. Adjust seasoning as needed.

Serve

Once the pork is done, shred it with two forks and serve with the cabbage slaw and cilantro lime mayo on the side.
