Prepare the Shrimp
Peel and devein the shrimp, leaving the tails on if desired. Rinse them under cold water and pat dry with paper towels.
Set up Breading Station
In three separate shallow bowls, place flour in the first, beaten eggs in the second, and a mixture of panko breadcrumbs, salt, black pepper, and cayenne pepper in the third.
Bread the Shrimp
Coat each shrimp in the flour, shaking off excess. Dip into the beaten eggs, then coat with the panko mixture. Set aside on a plate.
Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
Assemble the Sandwiches
Slice the sandwich buns in half. Spread a generous amount of remoulade sauce on the bottom half, add a layer of shredded lettuce, 2-3 fried shrimp, a slice of tomato, and a few rings of red onion. Top with the other half of the bun.
Serve
Serve the Crispy Shrimpwiches immediately with extra remoulade on the side.
