Make the Egg Wrappers

In a mixing bowl, whisk together the whole eggs and salt until well combined. Gradually add the flour, mixing until a smooth batter forms. Let the batter rest for 30 minutes.

Cook the Wrappers

Heat a non-stick skillet over medium heat and lightly grease with olive oil. Pour a small amount of batter into the skillet, tilting to spread it evenly into a thin layer. Cook for about 1-2 minutes until the edges lift. Flip and cook for another minute. Remove and set aside. Repeat with the remaining batter.

Prepare the Filling

In a bowl, mix the ricotta cheese, mozzarella cheese, and pesto until well combined.

Assemble the Tootsie Rolls

Place a spoonful of the cheese mixture onto the center of each egg wrapper. Fold the edges over the filling and roll tightly to form a tootsie roll shape.

Cook the Assembled Tootsie Rolls

In the same skillet, add a little more olive oil and cook the assembled tootsie rolls on each side for about 2-3 minutes until golden and crispy.

Serve

Remove from heat and serve warm. Enjoy your tootsie rolls with additional pesto on the side if desired.
