Prepare the Potatoes

Preheat the oven to 400°F (200°C). Toss the cubed red potatoes with olive oil, salt, black pepper, and rosemary. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

Cook the Broccolini

In a pot of boiling salted water, blanch the broccolini for about 3-4 minutes until bright green and tender. Drain and set aside.

Cook the Steak

Season the baseball cut steak with salt and black pepper. In a skillet over medium-high heat, add olive oil and sear the steak for about 4-5 minutes on each side for medium-rare. Remove from the skillet and let it rest.

Make the Marsala Sauce

In the same skillet, add the prosciutto and mushrooms. Sauté for 3-4 minutes. Pour in the Marsala wine and simmer for 5-7 minutes, allowing the sauce to reduce and thicken slightly. Adjust seasoning if necessary.

Serve

Slice the steak and serve it topped with the mushroom Marsala sauce alongside the roasted potatoes and broccolini.
