    Prepare the Sauce

    In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery, and sauté until softened.

    Cook the Meats

    Add ground beef and ground pork to the pot, breaking it up with a spoon. Cook until browned.

    Add Garlic and Tomatoes

    Stir in minced garlic, crushed tomatoes, tomato paste, and red wine. Season with oregano, salt, and pepper.

    Simmer the Sauce

    Bring the sauce to a simmer and let it cook for at least 30 minutes, stirring occasionally.

    Cook the Noodles

    While the sauce simmers, cook the ribbon noodles according to package instructions until al dente. Drain and set aside.

    Layer the Dish

    Preheat the brick oven to 375°F (190°C). In a baking dish, layer half of the noodles, followed by half of the meat sauce, half of the mozzarella, and dollops of ricotta. Repeat the layers.

    Bake

    Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

    Let it cool for a few minutes before serving. Enjoy your Papa Biagio’s Bolognese!
