Enchiladas and Tacos

Preparation and Assembly

Prepare the Meat Filling
In a skillet over medium heat, cook the ground beef with taco seasoning until fully browned. Drain excess grease and set aside.

Assemble Enchiladas
In a baking dish, spread 1/2 cup Tex-Mex sauce. Take a tortilla, fill it with the ground beef mixture, roll it up, and place it seam-side down in the dish. Repeat with half the tortillas.

Add Chicken Enchiladas
Fill the remaining tortillas with shredded chicken and place them in the dish. Pour tomatillo sauce over the chicken enchiladas.

Add Cheese Enchiladas
For cheese enchiladas, fill tortillas with shredded cheese, roll them up, and place them in the dish. Pour ranchero sauce on top.

Prepare Tostada Chips
Heat vegetable oil in a pan. Fry the corn tortillas until crispy and golden. Drain on paper towels.

Serve
Serve the enchiladas with crispy taco, homemade tostada chips, queso dip, shredded lettuce, sour cream, and salsa on the side.
