Cheese Enchiladas

Method

Cooking Instructions

  1. 1

    Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.

  2. 2

    Add the Tomatoes and Spices

Add diced tomatoes, green chilies, ground cumin, chili powder, salt, and black pepper to the saucepan. Simmer for 10 minutes, stirring occasionally.

  3. 3

    Prepare the Enchiladas

Preheat the oven to 350°F (175°C). Soften the corn tortillas by lightly frying them in a skillet with a bit of oil for about 30 seconds on each side. Drain on paper towels.

  4. 4

    Assemble the Enchiladas

Spread a bit of the Tex-Mex sauce in the bottom of a baking dish. Take a softened tortilla, fill it with shredded cheese, and roll it up. Place seam-side down in the baking dish. Repeat with remaining tortillas.

  5. 5

    Top with Sauce and Bake

Pour the remaining Tex-Mex sauce over the rolled enchiladas and sprinkle any remaining cheese on top. Bake for 20-25 minutes or until the cheese is bubbly and golden.

  6. 6

    Garnish and Serve

Remove from the oven, garnish with chopped fresh cilantro, and serve hot.
