Prepare the Enchiladas
Preheat the oven to 350°F (175°C). In a skillet, heat some oil and lightly fry each corn tortilla until soft. Remove tortillas and fill each with shredded cheese and cooked chicken, then roll them up tightly. Place in a baking dish seam-side down.

Make the Tex-Mex Sauce
In a saucepan, combine 1 cup of water, taco seasoning, and any additional spices to taste. Bring to a simmer and pour over the enchiladas in the baking dish. Top with remaining cheese.

Prepare the Flautas
In the same skillet, add more oil if necessary. Fill each tortilla with shredded chicken, roll tightly, and fry until golden brown and crispy. Remove and drain on paper towels.

Make the Tostada Chips
Cut corn tortillas into quarters and fry in hot oil until golden and crispy. Drain on paper towels and season with salt.

Assemble the Plate
On a large platter, arrange the enchiladas, flautas, crispy taco (filled with ground beef, lettuce, and tomato), guacamole, sour cream, and queso dip. Serve with tostada chips.
