Cook the Meats
In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the Andouille sausage, breakfast sausage, and ham. Cook until browned and cooked through, about 8-10 minutes. Remove from heat and set aside.

Sauté Vegetables
In the same skillet used for the meats, add the remaining tablespoon of olive oil. Sauté the diced onion and bell pepper until soft, about 5 minutes. Add sliced jalapeños and cook for an additional 2 minutes.

Cook the Eggs
In a separate non-stick pan, heat a little oil over medium-low heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Assemble the Bowl
In a serving bowl, layer the fried potatoes, cooked meats, sautéed vegetables, and top with the sunny-side-up eggs. Sprinkle cheese on top and serve immediately.
