Preparation Steps
- 1
Cook the Pasta
In a large pot, bring salted water to a boil. Add the lumache pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare Chicken
Preheat oven to 375°F (190°C). Season chicken breasts with salt, black pepper, and garlic powder.
- 3
Bread the Chicken
Set up a breading station: Place flour in one bowl, beaten eggs in another, and bread crumbs mixed with grated Parmesan cheese in a third. Dip each chicken breast first in flour, then in egg, and finally in the bread crumb mixture, ensuring they are fully coated.
- 4
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and place on a paper towel-lined plate to drain excess oil.
- 5
Assemble the Dish
In a baking dish, spread 1 cup of marinara sauce on the bottom. Place the fried chicken breasts on top, and cover each with the remaining marinara sauce, shredded mozzarella cheese, and chopped fresh basil.
- 6
Bake
Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
- 7
Serve
Serve the chicken parmigiana over the cooked lumache pasta, garnished with extra basil if desired.
